Baking Lab is an innovative bakery and test kitchen in Amsterdam where craftsmanship and experimentation go hand in hand. In this bright, open space on Linnaeusstraat, the team works with local grains, natural fermentation and surplus ingredients from the city. Think: bread made from old bread, spent grains from breweries or leftover vegetables — each recipe is a creative exploration of flavour, sustainability and reuse.
Alongside a rotating selection of sourdough breads, pastries and savoury bakes, Baking Lab also hosts workshops, educational projects and neighbourhood initiatives. Around the large central table, visitors, bakers and students exchange knowledge, ideas — and of course, freshly baked bread.
The bakery collaborates with local farmers, millers and partners in education and care. In doing so, Baking Lab raises awareness about food systems while strengthening the connection between the city and its surrounding region.
